To be honest, I don’t cook very often as cooking hasn’t been very much of a priority while moving and travelling.. obviously ;) I’ve been pretty spoilt with great restaurants in London, Monaco and while travelling so I do mentally save lots of great dishes in my cooking folder in my head as I discover new dishes, and this salmon salad has been on the top of my list to recreate. I whipped up this super easy salad in no time to surprise my mum today and both my mum and I were very pleased with the outcome and emptied the entire bowl completely! It was so incredibly delicious, not to mention perfectly healthy too! I shared this photo on Instagram and it seemed a recipe was requested so here you are:

Salmon Salad ingredients:

  • 250g Fresh Salmon back loin filet (I used Salma Laks here in Norway)
  • 1/2 avocado
  • 1/3 mango
  • 1/3 cucumber
  • Mesclun salad
  • 1 red chili (optional)
  • 1 tbsp chopped fresh coriander
  • Juice of 1 lime
  • Juice of 1 lemon
  • 1/2 tsp salt and pepper

It’s simple. Dice all the ingredients and mix in a bowl, add the juice and add salt and pepper to your taste. That’s all. Of course you can tweek it to your liking by adding vegetables you like, and if you’re a shrimp fan you can always replace the salmon with shrimp :)

salmon burger Clean Eating: Salmon Burger with spicy mango salsa

Salmon Burger ingredients:

  • 2 Salmon filets, about 250g in total.
  • Juice and zest of half an orange
  • 1 egg, beaten
  • 1 tbsp chopped fresh coriander
  • 2 tbsp almond meal/flour
  • 1/2 tsp salt and pepper

1. Mix all the ingredients thoroughly in a bowl using your hands and shape into little balls.

2. Cook on medium heat for about 7 minutes on each side.

Whilst the yummy burgers are in the pan, you can prepare the spicy mango salsa.

Spicy mango salsa:

  • 1 tbsp rice vinegar
  • 1 tbsp extra virgin olive oil
  • 1/4 of a red onion, finely chopped
  • juice of a lime
  • 2 red chilis, finely chopped
  • A handful of mango, finely chopped (I used frozen ones for the ease of it)

1. Mix all the ingredients.

If you want something on the side I recommend homemade guacamole, healthy and delicious! I always make extra and keep it in a little plastic container in the fridge.

Homemade guacamole:

  • Avocado
  • Tomato
  • Red onion
  • Garlic
  • Lemon juice
  • Red chilis
  • Salt and pepper
1. Mush the avocado and chop the other ingredients and mix them all together, et voila, you have guacamole :) Great for both dinners and tortilla snacks.

Gone are summery days with the craving for cold and crispy salads, and very welcome is the autumn and with it the craving for something warm and comforting while snuggeling up in the sofa. I’ve been asked to share healthy recipes and now that autumn is here I can finally share one of my favourite soups, perfect as a little meal in the end of the day.

While normal potatoes sadly don’t boost weight loss, sweet potatoes on the other hand do and they are really delicious as well! Sweet potatoes are a newly discovered superfood which are implemented in all kinds of weight loss diets for its nutritional benefits and low calorie content. In fact, sweet potatoes actually boost weight loss while ensuring you lots of beneficial nutrients. This soup only takes about 30 minutes, is very easily done, packed with nutrients and low in calories, and super cost effective as well.

For a serving for two, you’ll need:

♥ 2 sweet potatoes (200g), diced
♥ 2 carrots (200g), diced
♥ 1/2 onion (75g), finely chopped
♥ 2 garlic cloves
♥ Cumin
♥ Curry of your choice (I like to use Indian Vindaloo for that extra kick)
♥ Vegetable broth, with about 5dl water – but you can add more or less dependin gon the consistency you like.

(kcal per serving: 130, note: If you’re eating this as your main meal you might want to up your portion a bit!)

1. Heat a bit of olive oil in a deep pan and toss in onion, then saute until softend. Add garlic, and sprinkle on cumin and curry of your tasting. Let cook for 1 minute while getting the broth ready.

3. Add carrots, sweet potatoes and broth, and bring to a boil. Let simmer until the vegetables are soft and easily “mashable”. 10-15 minutes is probably enough.

5. Mash to a puré, and bring to a blender until you get a smooth texture.

Finish of with a drizzle of coriander on top, and curl yourself up in the sofa with your feel good vibrant metabolism boosting nutrient bomb :)

table Recipe: Healthy Raw Ice Cream

This summer I have been a really naughty raw-foodist, meaning I haven’t really been eating very clean. When one of James’ friends came to visit I felt really bad about it as he follows a very clean diet that is free of both gluten and dairy and packed with extra nutrients. So, I’m leaping into it again, and I’m starting out with a raw dairy free ice cream :)

The ice cream is done in a giffy and it’s super delicious! All you need is a few pealed chopped and frozen bananas (throw them in the freezer before you go to bed), a spoon of cacao powder and a bit of erythritol to sweeten it up. Toss it all in to the blender and whisk it up to a heavenly chocolate creamy smooth deliciousness. Yummy!! I sprinkled it with a bit of cacao nibs for the fun of it, but you can leave it as it is or sprinkle with nuts or what ever rocks your boat. If you’re not that into chocolate, you can replace the cacao with vanilla, berries, or honey and nuts.

I enjoyed the ice cream together with ipad-Vogue and a nail polish session in some of the new furniture we got from New York last week (you know the furniture I’ve been whining about for months) ;D I am so happy to finally have it all in place!! As I was taking these pictures a little fur ball came and wanted to be included, so we worked on the command “stay”, and he did so well!!! You can see his eyes are set on the treat waiting for him hahaha :D Such a good boy!

Bring the chocolate factory to your kitchen and start making your own healthy and delicious chocolates! These chocolates contain only healthy ingredients, packed with magnesium, antioxidants, calcium and b-vitamins amongst other goodies. They are just as delicious as normal chocolates, in fact I think I prefer them to the average chocolate bar. There is something special with eating chocolate without feeling bad about it :)

You need:

♥ 50 g cacao butter
♥ 5 tbsp coconut oil
♥ 4 tbsp cacao powder
♥ 2 tbsp carob powder
♥ 2 tbsp lucuma powder
♥ ½ tsp vanilla
♥ A pinch of salt (preferably Himalaya salt)
♥ Lavender (or anything else of your liking)

View this as a guide line, and taste your way to a combination that suits you.

How to:

1. Grate the cacao butter as it will melt much quicker this way, trust me ;)

2. Turn the oven to 40 degrees and place the plate with the grated cacao butter inside and leave it there untill it’s completely melted into beautiful liquid butter. If your oven won’t go down to 40 degrees, you can also place it in a bowl on top of a bowl of hot water, but make sure the temperature never exceeds 40 degrees. Add in the coconut oil. The warm butter will melt the oil and give a perfect consistency to work with.

3. Add the cacao powder and the carob powder and mix it in. I just used a fork, it will mix in pretty easily.

4. Add the lucuma powder for sweetness. I used about 2 tbsp, but use as much as you want according to your sweet tooth. You can also use a bit of raw honey or stevia if you want it sweeter.

5. Throw in a pinch of vanilla powder and salt for good measure, et voila! Your base for the chocolate is done. How easy was that? And so delicious…

Pour the mixture into moulds, and then add your desired taste to each chocolate – that way it’s easier to try several different ones :)

I’ve had a pot of lavender for the longest time in my cupboard and I’ve had no idea what to use it for, but then a little bird told me it could be nice to add lavender to the chocolate. The bird was right – it tastes like it was made for the Queen.

The chocolate moulds I’m using are so small that they cooled down just under 30 minutes in the freezer. What I love about raw chocolate is that they melt on your tongue like no other chocolate – seriously delicious.

Phuh, I can feel it’s been a while since I swung my rocking foot! I tried to do some exercise earlier but after 20 minutes I had to give in. A little is better than nothing, right? So instead of exercising I’m spending my time in the kitchen making some delicious and super healthy rawsome chocolates. I’ve tried lots of different combinations now, and last time I think I found the magic formula, but of course I didn’t write it down so now I’m going to try to redo it. Before I post the recipe I thought I’d tell you a bit more about the ingredients and why you should implement them to your diet.

About Raw Cacao

Cacao is the seed (nut) of a fruit of an Amazonian tree. When in its pure, raw form, cacao is one of nature’s most fantastic superfoods. Raw Cacao beans contain 10 grams of flavonol antioxidants per 100 grams, that is an incredible 10%! Cocoa powder has set the world record for antioxidants  To put that into perspective, that’s 14 times more antioxidant flavonoids than red wine, 21 times more than green tea, 7 times more than dark chocolate, and nearly 4 times more than Goji Berries! Besides its high level of antioxidants it is also a very rich source of omega-6 and omega-9 fatty acids.

Raw cacao is the primary dietary source of magnesium, the most deficient mineral in western civilisation. Magnesium is the most important mineral for a healthy functioning heart. It also plays a key role in producing energy for the neurons in the brain from glucose. So when there is an abundance of magnesium the brain works with clarity and focus.

Cacao is a great source of serotonin, dopamine, anandamide and phenylethylamine (PEA), four well-studied neurotransmitters, which are associated with feelings of well-being and help alleviate depression. Both PEA and Anandamide (the bliss chemical) are found in abundance in the brains of happy people and are particularly released when we are feeling happy. Both of these nuerotransmitters are present in raw cacao in large enough quanitities to affect the brain and lift our moods. Cacao also contains monoamine oxidase inhibitors (MAO Inhibitors) that keep neurotransmitters in the bloodstream for longer without being broken down.

Pure raw cacao also seems to diminish appetite – likely as a result of its unusual MAO inhibitors that allow more serotonin and other neurotransmittors like anandamide (the bliss chemical) to circulate in the brain, precipitating a rejuvenating effect

The Cacao butter

The “butter” is made from pure, cold-pressed oil of the cacao bean and is used to make both white chocolate and milk chocolate. It melts at about 34-38 degrees so it’s perfect for making raw chocolate!

The Raw Cacao powder

Normal cocoa powder is processed via the “Dutch method” meaning heat extracted (up to 150°C !) with solvents, thus destroying most of the nutrients and anti-oxidants and likely contaminating the end product. Raw Certified Organic Cacao powder is cold pressed from the nibs without solvents, then fine-milled and sifted so the most bio-available cacao particles filter into the final product. As the temperature is never allowed to exceed 40°C, the powder is considered a ‘raw’ food with all heat-sensitive vitamins, minerals and anti-oxidants remaining intact, thereby maximizing digestion and absorption.

The powder can be used to make chocolates, chocolate milk or hot chocolate (mix with almond milk), add to smoothies, milkshakes, coffee, desserts, or blend with honey for chocolate syrup. It is raw and gluten-free, and suitable for vegans as well.

Carob Powder

Carob is another superfood, it is a tropical pod that contains a sweet, edible pulp and inedible seeds. After drying, the pulp is roasted and ground into a powder that resembles cocoa powder, but does not have the same flavor and texture of cacao. Just like cacao, carob is also very nutritious. Cacao has lots of magnesium, carob has lots of calcium but unlike cocoa powder and chocolate, carob is caffeine-free. Carob is naturally sweet and requires much less sweetener when used in recipes with chocolate. Carob contains as much vitamin B1 as asparagus or strawberries; as much niacin as lima beans, lentils, or peas; and more vitamin A than aubergine, asparagus, and beetroot. It also contains vitamin B2, calcium, magnesium, potassium, and the trace minerals iron, manganese, chromium, copper, and nickel. It contains approximately 8% protein and is a good source of fibre. Compared to chocolate, carob is three times richer in calcium, has one-third fewer calories and seventeen times less fat. It is said that regular use of carob helps in preventing lung cancer.

Lucuma Powder (pronounced loo-ku-mah)

Lucuma is a sweet and edible fruit of the Lucuma tree and was once hailed the “Gold of the Incas”. Lucuma serves as a healthy sweetener as it is very low in sugars, and with its naturally occurring beta-carotene, niacin, and iron, lucuma powder makes a healthier option to the “empty calorie” sweeteners. Lucuma powder also soothes the nervous system as it is loaded in vitamin B3- the nutrient known to aid in depression. Carotene by the way is what gives it the pretty orange colour and the even prettier ability to protect our DNA from cancer.

Coconut oil

Coconut has a high level of saturated fats, but it’s a different kind of saturated fats than what we find in unhealthy processed foods. The kind of saturated fats that are occurring naturally, like in coconut oil, improves your heart health, boosts your thyroid, increase your metabolism, promotes a lean body and weight loss if needed and supports your immune system. Coconut oil is nature’s richest source of medium-chain fatty acids (MCFAs), also called medium-chain triglycerides or MCTs which are easily digested and immediately burned by your liver for energy — like carbohydrates, but without the insulin spike. MCTs actually boost your metabolism and help your body use fat for energy, as opposed to storing it, so it can actually help you become leaner. Nearly 50 percent of the fat in coconut oil is of a type rarely found in nature called lauric acid, a “miracle” compound because of its unique health promoting properties. Your body converts lauric acid into monolaurin, which has anti-viral, anti-bacterial and anti-protozoa properties.

Making chocolate out of these ingredients are bound to be good for you. They are all superfoods which bring different kinds of nutrition to your body, which you need. My prayers have finally been heard, chocolate is healthy :D

I have been super lazy today :) I spent most of the day on the balcony in the sun while reading books, magazines and blogs and talking with James for hours on both the phone and skype. He is on the other side of the world, but because of some visa issue he has to return earlier than expected (yay!) which unfortunately means he has to go back again next month (buuuh). Skype is such a wonderful thing. I use it with my family in Sweden, my family in Norway and now also James. I’ve had some questions regarding how to keep the relationship alive whilst being far apart for longer periods of time. I think finding a bit of time for Skype each day is really important, as well as cute little messages ♥ Other than that, I actually believe it’s healthy to be apart and miss each other now and then.

To make up for my laziness I spent the after noon being efficient around the house. I’m having three beautiful family members visiting this week, and I can’t wait to have them here!! I’ve been sorting out everything I can so that they can have a pleasant stay here in Avenue de Grande Bretagne. That includes baking – the delicious and unhealthy kind! I made buns and cinnamon rolls which I popped into the freezer so that I can whip them out for a nice cup of tea on the balcony when we come back from the beach :)

Recipe:

You need:

♥ 1 kg flour
♥ 6 dl milk ( I didn’t have milk and so I used activia mixed with water, which surprisingly tasted even better)
♥ 150 g sugar
♥ 3 tsp salt
♥ 3 tsp cardamom
♥ 1 sachet dry yeast
♥ 1 egg, room tempered
♥ 150 g butter, room tempered and in dices

How to:

1. Mix all the dry ingredients and the egg in a bowl.
2. Heat the milk untill luke warm (about 30 C).
3. Add the milk little by little (use a slow speed if you’re using a torture machine of some kind).
4. Now add the butter little by little whilst still keeping it on a slow speed. It will take a while for the butter to absorb so just let it be for 5 minutes.
5. Leave the dough in a warm place for an hour, or untill double size.
6. Heat the oven to 240 C (we’ll adjust this down to 180 later, it’s just to compensate for when we open the door to put in the buns).
7. Roll the dough into buns and leave them for yet another 30 minutes before you lower the temperature of the oven to 180 C and pop them in for 15-20 minutes.
(if you want you can make cinnamon rolls as well, just leave som of the dough and use a rolling-pin to stretch the dough. Add butter, sugar and cinnamon and roll into a sausage, and divide into little cute rolls.)

Result: Super yummy and delicious buns :D Having already made buns in the freezer is such a useful thing if you have unexpected guests, or just don’t want to spend hours in the kitchen whilst having guests over ;)

My little germs has grown into long, slender vibrant wheatgrass. This in only about a week. Isn’t it beautiful? After having nurtured it as if it was a baby, it feels weird to look at it now knowing I’m going to drink it. That’s right. I’m drinking grass now.

As I briefly mentioned some time ago, I used to be really into superfoods and went for detox cleanse in Thailand as well as growing my own wheatgrass at home. I fell out of it for a few years, and I now feel a huge difference in my body which is why I’m getting back into it again. I started with incorporating superfoods, and first off was spirulina and goji berries, as well as other superfoods I haven’t used in the past like hemp protein, cacao powder, carob powder, maca powder, cacao butter and cocout oil. It is now time for one of the healthiest superfoods, the wheatgrass.

What is wheatgrass? And why drink it?

♥ Wheatgrass is a complete food that contains 98 of the 102 earth elements.
♥ It provides a concentrated amount of nutrients including iron, calcium, magnesium, amino acids, chlorophyll, and vitamins A, C and E, It is very high in vitamins A, B-Complex, C, E and K.
♥ Some proponents tout wheatgrass for cancer, anemia, diabetes, constipation, infections, skin conditions, colon cleansing, ulcerative colitis and joint pain, among other health concerns.
♥ Its rich nutrient content boosts immunity, kills harmful bacteria in your digestive system, and rids your body of waste which can lead to healthy weight loss and higher energy levels.
♥ 30 grams (1 ounce) of wheatgrass contains 103 vitamins, minerals and amino acids.
♥ One ounce of wheatgrass juice represents as much nutritional value as 1 kg (approximately 2.5 pounds) of fresh green vegetables.

I found these super cute pots when I was in Norway last (florist connected to Meny Granholmen, Sandefjord) and I instantly fell in love as they make the perfect little pots for wheatgrass ♥ Aren’t they cute??

To juice the grass you need a juicer made for the purposen of juicing grass. I found mine online some years ago, you can find plenty on amazon etc. To get the juice out of the grass using a juicer like mine, you add the grass on the top and grind it untill it drops down in the basket in front. It’s very easy :)

EDIT: I was asked about the taste and I can’t help but using the word grass to describe it – because it just taste like grass. I would say that it’s very sweet at first but with a slight bitter aftertaste. It doesn’t taste lovely, but it’s just a shot and it’s done. No nasty lingering aftertaste or anything.

I’ve been browsing through recipes and noticed almond milk is a popular ingredient in lots of Raw recipes so I decided to make it :) It’s probably the easiest recipe I’ll ever give you ;)

milk Recipe: How to make Almond Milk

You need:

♥ Unsalted Almonds

♥ Water

(♥ optional: You can add sweetener like stevia, and some vanilla if you want to make it sweeter)

Equipment:

♥ Blender

♥ A sieve or coffee filter

How to:

1. Soak the almonds in water overnight. This makes them softer and easier to grind.

2. Rinse them under running water and drain. Pop them into a blender and fill it half way up with cold pure water. Blend!

3. Now to the part where yoiu need to seperate the almonds from the milk. I was lucky enough to have a sieve with really small holes, but if you don’t have that then you can use a coffee filter or anything like that. Squeeze out the milk from the almonds so that you’re left with almost dry almond flour in the end. You don’t want any of the almonds to go through to the milk. The dry almond mix you end up with in the end is perfect for adding into smoothies or cookies or anything like that :)

That’s all. How easy was that? When my boyfriend came home an hour ago he was so impressed that I had actually made milk, and it was really delicious together with the dark chocolate I made yesterday which I will give you next :) Who knew raw could be so easy?

Even though I’m not fully converted yet, I try to eat more and more raw as I feel my body is much happier with it. This dish, Salmon tartare, has actually been a favourite of mine since before I got my mind on the Raw Diet so of course I want to share this with you as it really is the easiest dish in the world, it takes no time and it’s super healthy for you.

You need:

♥ Skinless and boneless salmon fillets, as fresh as possible (I used Salmalaks from Meny in Norway).

♥ Avocado

♥ Red bell pepper

♥ Red Chili (optional)

♥ Onion

♥ Salt & pepper

♥ Soy Sauce

♥ Melon (or mango)

♥ Lemon (or lime)

1. Start by cutting the salmon into small dices.

2. Chop up the vegetables you want to include and combine it with the salmon. I had red bell pepper, onion, chili and avocado in the fridge so I used that, but you can use almost anything. Cucumber is also really nice. I also quite like a hint of something sweet together with the spicy chili so I tossed in a few bits of melon as well. Mango works just as well, if not better.

3. Squeeze a bit of lemon over the mixture.

4. Add a pinch of salt & pepper.

5. Pour in a squirt of soy sauce..

6. … and BLEND – tadaaaaa, that’s all folks :)
