Summer rolls – Delicious, easy and healthy

Yesterday was such a wonderful night. We made Summer Rools which is a really tasty, quick and healthy meal. Because some of you asked how we do our Summer Rolls I decided I might as well do a post about it as it’s a great choice for dinner if you’re out of ideas or want some new stuff on your menu ;) 

First, what are Summer Rolls?

You’ll need:

  • Chicken, pork, prawn or what ever kind of meat you fancy
  • Salad
  • Vegetables of your choice (I used cucumber, onion and avocado)
  • Scrambled eggs (if you’re as weird as me)
  • Rice Paper
  • Sauce of your liking ( I used extra hot Piri-Piri sauce and soya sauce)
Estimated time: 15 minutes

Step 1:

Prepare your meat of choice however you like it. We decided to spice our chicken with some chilli to give it an extra kick.

Step 2:

Chop up veggies and all other foods you want in your rolls. I used avocado, onion, salad and cucumber as well as scrambled eggs for the fun of it. I also placed a bowl of shrimp crisps at the table as they are delicious as a starter or just to pick at during your meal. Yum, don’t you used love those?

Step 3:

Place a rice paper in a bowl of hot water and leave it there untill it’s all soft and nice, usually about a minute.

Step 4:

Fill the rice paper with all of the goodies you want in your roll and top it off with a splash of your favourite sauces. Today I used extra hot Peri-Peri sauce and soya. Last time I made this I used a really delicious soya sauce infused with garlic which was a really nice alternative as well. Mango, lemongrass and honey-lime is probably delicious as well if you don’t want anything too spicy. It’s all up to you really, you and your fabulous imagination :)

Today I’m almost happy James has gone to Dubai, after all it means I get to have all the left over to myself moahaha ;)
