Hey sweetest!

Yesterday was a beautiful day! We went to Hurlingham Park for the polo in the park event where I enjoyed Pimms and wine as well as lots of lovely people. Oh, and the polo of course ;)

This week I have seen so many celebrities, both smaller ones and bigger ones! Yesterday Leona Lewis was hanging out with her friends at the same VIP lounge we were at. I couldn’t get myself to take a picture of her as you see there weren’t that many people there and it would’ve been too obvious.

Such beautiful horses!

After the polo in the park we felt quite merry and decided to go and see a movie at The Lounge in Queensway. I don’t think I will ever go back to a normal cinema after having done it this way! You get a chair with a foot rest as well as a little sidetable attached to the chair. During the movie you can order dinner and drinks which they serve at your chair. Lovely!! I posted a picture of my little bellini on Instagram :) We saw Promtheus, and I don’t recommend it…

After ther movie the rain was pouring down so we just went to a thai restaurant to get some food before we headed back to bed.

Today it’s been rain, rain and more rain.. so I’ve just been lying in bed all day enjoying the hotel life with room service and such :)

Good morning gorgeous! ♥

So happy that so many of you are up for the blog sale of heels!! I didn’t know so many of you had the same size as me, I always feel embarrassed when shoe shopping as I feel everyone around me wear a petite 36 or 37. That’s when I remind myself that Paris Hilton has a 42-43, so mine are not that bad after all :) Anyway, bags are packed, doors are locked and wind coats are brought out of the dust. We’re ready for London! We have such a busy day that I will actually be flying in what I will wear untill after dinner. It seems we will have time to go via the hotel room to change after dinner at least, which means I get to jump into a dress before we go clubbing. Phuh, I feel exhausted just thinking about it – but exhausted in a good way. I love having lots to do, makes me feel more alive than anything else! :D

Hey pretty face!

I’ve spent the last two hours trying to figure out what to pack for London. It’s summer, yet it’s raining.. am I right, Londoners? Gah.. We’re going to an art gallery, to a polo event, shopping, restaurants, clubbing – sounds to me like I need to bring my whole wardrobe ;) Strangely, James disagrees and thinks I should just pack jeans and a t-shirt. Guys. They just don’t get it.

I’m having trouble just figuring out what shoes to bring.. Speaking of, I was thinking of having a little blog sale of heels as I have so many pairs I can’t wear anymore after I that incident with my foot. Doesn’t look like I’m getting an operation as fast I was hoping for either :/

Bring the chocolate factory to your kitchen and start making your own healthy and delicious chocolates! These chocolates contain only healthy ingredients, packed with magnesium, antioxidants, calcium and b-vitamins amongst other goodies. They are just as delicious as normal chocolates, in fact I think I prefer them to the average chocolate bar. There is something special with eating chocolate without feeling bad about it :)

You need:

♥ 50 g cacao butter
♥ 5 tbsp coconut oil
♥ 4 tbsp cacao powder
♥ 2 tbsp carob powder
♥ 2 tbsp lucuma powder
♥ ½ tsp vanilla
♥ A pinch of salt (preferably Himalaya salt)
♥ Lavender (or anything else of your liking)

(You can read more about the ingredients and where to get them here)

View this as a guide line, and taste your way to a combination that suits you.

How to:

1. Grate the cacao butter as it will melt much quicker this way, trust me ;)

2. Turn the oven to 40 degrees and place the plate with the grated cacao butter inside and leave it there untill it’s completely melted into beautiful liquid butter. If your oven won’t go down to 40 degrees, you can also place it in a bowl on top of a bowl of hot water, but make sure the temperature never exceeds 40 degrees. Add in the coconut oil. The warm butter will melt the oil and give a perfect consistency to work with.

3. Add the cacao powder and the carob powder and mix it in. I just used a fork, it will mix in pretty easily.

4. Add the lucuma powder for sweetness. I used about 2 tbsp, but use as much as you want according to your sweet tooth. You can also use a bit of raw honey or stevia if you want it sweeter.

5. Throw in a pinch of vanilla powder and salt for good measure, et voila! Your base for the chocolate is done. How easy was that? And so delicious…

Pour the mixture into moulds, and then add your desired taste to each chocolate – that way it’s easier to try several different ones :)

I’ve had a pot of lavender for the longest time in my cupboard and I’ve had no idea what to use it for, but then a little bird told me it could be nice to add lavender to the chocolate. The bird was right – it tastes like it was made for the Queen.

The chocolate moulds I’m using are so small that they cooled down just under 30 minutes in the freezer. What I love about raw chocolate is that they melt on your tongue like no other chocolate – seriously delicious.

Hey sweets ♥

I hope you are enjoying the Thursday? I can’t believe we’ve almost reached the weekend again already! This weekend James and I are off to London, and so the plan was to save my eager little shopping heart for the endless possibilities in London. Phuh, I can feel it’s been a while since I swung my rocking foot! I tried to do some exercise earlier but after 20 minutes I had to give in. A little is better than nothing, right? So instead of exercising I’m spending my time in the kitchen making some delicious and super healthy rawsome chocolates. I’ve tried lots of different combinations now, and last time I think I found the magic formula, but of course I didn’t write it down so now I’m going to try to redo it. Before I post the recipe I thought I’d tell you a bit more about the ingredients and why you should implement them to your diet.

About Raw Cacao

Cacao is the seed (nut) of a fruit of an Amazonian tree. When in its pure, raw form, cacao is one of nature’s most fantastic superfoods. Raw Cacao beans contain 10 grams of flavonol antioxidants per 100 grams, that is an incredible 10%! Cocoa powder has set the world record for antioxidants  To put that into perspective, that’s 14 times more antioxidant flavonoids than red wine, 21 times more than green tea, 7 times more than dark chocolate, and nearly 4 times more than Goji Berries! Besides its high level of antioxidants it is also a very rich source of omega-6 and omega-9 fatty acids.

Raw cacao is the primary dietary source of magnesium, the most deficient mineral in western civilisation. Magnesium is the most important mineral for a healthy functioning heart. It also plays a key role in producing energy for the neurons in the brain from glucose. So when there is an abundance of magnesium the brain works with clarity and focus.

Cacao is a great source of serotonin, dopamine, anandamide and phenylethylamine (PEA), four well-studied neurotransmitters, which are associated with feelings of well-being and help alleviate depression. Both PEA and Anandamide (the bliss chemical) are found in abundance in the brains of happy people and are particularly released when we are feeling happy. Both of these nuerotransmitters are present in raw cacao in large enough quanitities to affect the brain and lift our moods. Cacao also contains monoamine oxidase inhibitors (MAO Inhibitors) that keep neurotransmitters in the bloodstream for longer without being broken down.

Pure raw cacao also seems to diminish appetite – likely as a result of its unusual MAO inhibitors that allow more serotonin and other neurotransmittors like anandamide (the bliss chemical) to circulate in the brain, precipitating a rejuvenating effect

The Cacao butter

The “butter” is made from pure, cold-pressed oil of the cacao bean and is used to make both white chocolate and milk chocolate. It melts at about 34-38 degrees so it’s perfect for making raw chocolate!

The Raw Cacao powder

Normal cocoa powder is processed via the “Dutch method” meaning heat extracted (up to 150°C !) with solvents, thus destroying most of the nutrients and anti-oxidants and likely contaminating the end product. Raw Certified Organic Cacao powder is cold pressed from the nibs without solvents, then fine-milled and sifted so the most bio-available cacao particles filter into the final product. As the temperature is never allowed to exceed 40°C, the powder is considered a ‘raw’ food with all heat-sensitive vitamins, minerals and anti-oxidants remaining intact, thereby maximizing digestion and absorption.

The powder can be used to make chocolates, chocolate milk or hot chocolate (mix with almond milk), add to smoothies, milkshakes, coffee, desserts, or blend with honey for chocolate syrup. It is raw and gluten-free, and suitable for vegans as well.

Carob Powder

Carob is another superfood, it is a tropical pod that contains a sweet, edible pulp and inedible seeds. After drying, the pulp is roasted and ground into a powder that resembles cocoa powder, but does not have the same flavor and texture of cacao. Just like cacao, carob is also very nutritious. Cacao has lots of magnesium, carob has lots of calcium but unlike cocoa powder and chocolate, carob is caffeine-free. Carob is naturally sweet and requires much less sweetener when used in recipes with chocolate. Carob contains as much vitamin B1 as asparagus or strawberries; as much niacin as lima beans, lentils, or peas; and more vitamin A than aubergine, asparagus, and beetroot. It also contains vitamin B2, calcium, magnesium, potassium, and the trace minerals iron, manganese, chromium, copper, and nickel. It contains approximately 8% protein and is a good source of fibre. Compared to chocolate, carob is three times richer in calcium, has one-third fewer calories and seventeen times less fat. It is said that regular use of carob helps in preventing lung cancer.

Lucuma Powder (pronounced loo-ku-mah)

Lucuma is a sweet and edible fruit of the Lucuma tree and was once hailed the “Gold of the Incas”. Lucuma serves as a healthy sweetener as it is very low in sugars, and with its naturally occurring beta-carotene, niacin, and iron, lucuma powder makes a healthier option to the “empty calorie” sweeteners. Lucuma powder also soothes the nervous system as it is loaded in vitamin B3- the nutrient known to aid in depression. Carotene by the way is what gives it the pretty orange colour and the even prettier ability to protect our DNA from cancer.

Coconut oil

Coconut has a high level of saturated fats, but it’s a different kind of saturated fats than what we find in unhealthy processed foods. The kind of saturated fats that are occurring naturally, like in coconut oil, improves your heart health, boosts your thyroid, increase your metabolism, promotes a lean body and weight loss if needed and supports your immune system. Coconut oil is nature’s richest source of medium-chain fatty acids (MCFAs), also called medium-chain triglycerides or MCTs which are easily digested and immediately burned by your liver for energy — like carbohydrates, but without the insulin spike. MCTs actually boost your metabolism and help your body use fat for energy, as opposed to storing it, so it can actually help you become leaner. Nearly 50 percent of the fat in coconut oil is of a type rarely found in nature called lauric acid, a “miracle” compound because of its unique health promoting properties. Your body converts lauric acid into monolaurin, which has anti-viral, anti-bacterial and anti-protozoa properties.

Making chocolate out of these ingredients are bound to be good for you. They are all superfoods which bring different kinds of nutrition to your body, which you need. My prayers have finally been heard, chocolate is healthy :D

Yesterday was so much fun! Cipriani was wonderful, the interior was gorgeously done in the style of a yacht with nice Italian food! If you follow me on Instagram or Twitter, you’ll already know the highlight of the night, but if not then keep on reading. As we were sipping on our Bellini’s we noticed that people were looking over at the table next to us all the time, so we did too – and guess what? Mick Jagger sat on the table next to us having dinner!! Mick Jagger, as in the lead vocalist and a founder member of The Rolling Stones!!!! Whoaaa :D

Dinner rarely come without a following drink or two (read bottles) in Monaco, and so we headed off to Sass which is the oldest club/bar in Monaco. As we walked into Sass the one and only Sir Michael Philip “Mick” Jagger walks past us, and let me tell you – he moves like Jagger :D So yeah, I had physical contact with a rockstar yesterday.. I’m such a groupie!! Haha..

I tried to take some photos along the night, but after having consumed bellinis, red wine, champagne and various drinks the memory gets slightly weakened, but I did take a few in the end though :)

Tonight we’re having dinner with some friends at a newly opened restaurant, Cipriani. They already have a restaurant in London which is fab so I’m very excited! I haven’t dressed up properly like this for weeks or even months, so I’m having major issues figuring out what to wear tonight. Dress or skirt, long or short, black or colourful.. gah. I guess it’s just one of those things that comes with being a girl, because judging from my visit from Norway last week – this never ends ;) You should have seen us in my dressing room. Outfit after outfit were tried on and makeup was floating all over with four mirthful scandinavians in the middle :)

After a long morning of serious decision making I’m down to two dresses, and I need some help – which one shall I go for?
