Gone are summery days with the craving for cold and crispy salads, and very welcome is the autumn and with it the craving for something warm and comforting while snuggeling up in the sofa. I’ve been asked to share healthy recipes and now that autumn is here I can finally share one of my favourite soups, perfect as a little meal in the end of the day.
While normal potatoes sadly don’t boost weight loss, sweet potatoes on the other hand do and they are really delicious as well! Sweet potatoes are a newly discovered superfood which are implemented in all kinds of weight loss diets for its nutritional benefits and low calorie content. In fact, sweet potatoes actually boost weight loss while ensuring you lots of beneficial nutrients. This soup only takes about 30 minutes, is very easily done, packed with nutrients and low in calories, and super cost effective as well.
For a serving for two, you’ll need:
♥ 2 sweet potatoes (200g), diced
♥ 2 carrots (200g), diced
♥ 1/2 onion (75g), finely chopped
♥ 2 garlic cloves
♥ Cumin
♥ Curry of your choice (I like to use Indian Vindaloo for that extra kick)
♥ Vegetable broth, with about 5dl water – but you can add more or less dependin gon the consistency you like.
(kcal per serving: 130, note: If you’re eating this as your main meal you might want to up your portion a bit!)
1. Heat a bit of olive oil in a deep pan and toss in onion, then saute until softend. Add garlic, and sprinkle on cumin and curry of your tasting. Let cook for 1 minute while getting the broth ready.
3. Add carrots, sweet potatoes and broth, and bring to a boil. Let simmer until the vegetables are soft and easily “mashable”. 10-15 minutes is probably enough.
5. Mash to a puré, and bring to a blender until you get a smooth texture.
Finish of with a drizzle of coriander on top, and curl yourself up in the sofa with your feel good vibrant metabolism boosting nutrient bomb :)

Sweet potato is one of my favourite foods! This soup looks mouth-wateringly good, I am bookmarking it. My favourite thing to do with sweet potatoes though is to just chop them up and stick them in the oven with a little coconut oil and coarse sea salt for healthy chips. I have heard they are also delicious when sliced in two and baked with a large sprinkling of cinnamon and of course a dollop of coconut oil.

Serves 2-3
•1tbsp coconut oil or olive oil
•1/2 red onion, roughly chopped
•1 garlic clove, crushed
•1 large carrot, peeled and chopped
•1 large sweet potato, chopped
•1 heaped tsp grated fresh root ginger
•1/4tsp turmeric
•2tsp Marigold Reduced Salt Vegetable Bouillon Powder
•1/2 red pepper, diced
•75ml coconut milk

Thank you very much for the quick answer! As for the spices depending on my mood it would be black pepper, cinnamon, allspice (or a mix of the above) in that case I omit curry and usually garlic because I want the sweeter taste. Sometimes I add quinces or any kind of sour apples plus cinnamon and allpsice or just nutmeg and orange zest (no onion, curry and garlic), lemon zest and garlic or fresh corriander leaves, pumpkin, curry, lime zest, onion and garlic… It depends on the mood of the moment. I love to sprinkle it with pumpkin seeds roasted with a little bit of olive oil and smoked paprika… Hope you enjoy one of my alternations!
